Day Six Sugar Free & Flour-Free and Sugar-Free Pancakes Recipe #1wksugarfree

I know it's only evening here and I still have hours left before the day is over for me, but I decided to post early today because things are going really well. I had a moment where I struggled, which I will describe in a moment, but other than that, remaining sugar free is getting easier.

My momentary struggle happened when my husband and I went grocery shopping. We needed food, so I hadn't eaten much by then and I was hungry.  You should never go shopping while hungry. We passed by a large pack of marshmallows which were on sale for £1. For a brief moment, I really struggled not to buy them. I could even picture myself opening the pack and eating some on the way home. I remembered how they would taste. Until that moment, I didn't even know that marshmallows could be a problem for me. I like marshmallows, but my cravings usually fall more towards chocolate and caramel. Did you know that marshmallows have a smell? They do, and in that moment, I remembered it.

We continued on and there were a couple of things that called to me, though none as strongly as the marshmallows had. Pink & Whites (a wafer-like thing with marshmallow between the two sides) were on sale for 50 pence a pack, and my husband even drew my attention to them, but I shook my head "no" and quickly moved on. Alpen Light cereal bars were on sale too, and we usually buy those when they are on sale. My husband asked the question, but I wasn't even tempted for me. In fact, I told him he could buy them for him, as I knew I would be able to control myself around them.

I ate lots of grilled chicken and salad ingredients today. I had a bit of cheese and some yogurt. I also had some watermelon and plums. Later, I have some strawberries that I can enjoy if I get hungry after my workout on the elliptical crosstrainer. We have bought some eggs, so I will probably make myself an omelet for breakfast, complete with peppers, onion, a sprinkling of cheese and some lean bacon.

As of this morning, my weight is down 8.6lbs. I have to admit that I am thrilled, especially when my weight loss had been stuck for several months.

How are you doing with the challenge so far? Let me know in the comments below.

Here is a recipe for pancakes that doesn't use any flour or sugar. It does use sweetener, but you can reduce the amount at your discretion. I sometimes like adding cinnamon to my pancakes. I recommend topping the pancakes with fruit and/or yogurt.

Flour-Free and Sugar-Free Pancakes

Makes 2 pancakes.

Ingredients

4 tbsp sweetener
1 tsp vanilla extract
1 egg

Directions

1. Separate the egg yolk and the egg white into separate bowls.

2. Add 2 tbsp of sweetener to the egg white. Using an electric mixer, whip up the egg white until it makes stiff peaks.

3. Add the vanilla extract and the rest of the sweetener to the egg yolk and mix well.

4. Fold the egg yolk mixture into the egg white mixture.

5. Spray a pan with Fry Light and pour half of the mixture into the pan. After a minute, flip the "pancake" over.

6. Take it out a minute later and repeat the cooking process with the rest of the mixture.

Add your favorite topping and enjoy!

Sugar Free Day Five #1wksugarfree

Another day of avoiding sugar and, in my case, bread. I had a salad with a lean sausage cut up in it for lunch and another, bigger salad with chicken for dinner. Breakfast is usually eggs and yogurt, but I am out of eggs, so  just had the yogurt and a banana. I didn't go shopping today, so I need to go buy some more eggs.

This morning when I weighed myself, I have lost another small amount of weight for a total loss of 7.2 lbs in total so far. This will be interesting to see how the next few days go as I am at a weight I tend to get stuck at when I'm losing. The first day of the challenge, I lost 3.4lbs. The second day I lost 1.4lbs. The third day, I lost 2 lbs and yesterday, I lost .4lbs. It'll be interesting to see how long this keeps up.

Here are links to helpful articles about the evils of sugar and sugar addiction that I have found. Some I have read fully and some I have only skimmed.

These are just a few of the articles I have found on the topic. There is tons of material out there about sugar and its effect on us. I was informed of a 30 day challenge to go sugar-free that has a Facebook page, so I'm sharing it here, in case anyone is interested in checking it out after this sugar-free week is up. It's called The Sugar Challenge.

Tips for Healthier Take-Aways & Eating Out

Spinach & Cheese Cannelloni sm

Eating at restaurants and having take-aways brought to your home is risky when trying to lose wieght or maintain a healthy lifestyle. Most fast-food, take-aways and restaurants serve very unhealthy, high fat and high calorie food. So what are you to do to make those times when you are going to eat out or order in a healthier option for you?

If you are having a kebab, skip the pitta bread and sauces (add your own, healthier, sauces) and have the whole chicken pieces off the stick, not the ones shaved off the larger piece as that is held together with fat. And eat all of the salad bits that come with it.

If you are having pizza, well, there isn't really much you can do about how bad the pizza places are for you, but you can make sure not to eat more than a couple of slices and not to have any extras with it. And don't allow yourself a stuffed crust either.

If you are eating Chinese, choose boiled rice rather than fried rice. Don't have anything battered, and stay away from heavy sauces. Chicken is probably a safer choice of meat than beef, pork or duck.

If you are eating Indian, again choose boiled rice. Most of the sauces will be bad for you, but you will help yourself by passing on the Naan bread and side dishes. Find out if any of the tomato-based sauces are made without using cream.

If you are having Mexican, remove some of the cheese on your dish, if possible. The dish will taste just as good with half the cheese as it does with all of the cheese, and cheeses used in restaurants tend to be high-fat cheeses. Make sure you have lots of lettuce and tomato with your dish and don't just leave it on your plate. Remember that the shells, whether corn or flour, are not very healthy, so either choose a dish that doesn't use tortilla shells or limit your consumption of them. Taco sauce should be safe to add to your dish.

If you are having Italian, pasta dishes are your safest bet, along with tomato-based sauces. Add some vegetables to your order, but request that they be butter-free. Make sure the dish you choose doesn't require a lot of cheese. and if all else fails, you can have a sald with the dressing on the side.

Your best bet, if you are craving kebabs, pizza, Chinese, Indian, Italian or Mexican food, is to make it yourself. There are a multitude of healthy recipes that will satisfy these cravings (some of them on my Skinny Dreaming Recipes site).

Just make sure that you do not eat out or order in very often, and you should be okay with whatever you choose to eat. One night of eating restaurant food can ruin an entire week's work of eating healthy, so, while you don't have to eliminate it from your eating completely, limiting your eating-out and take-aways is the best plan.

Seven Tips For Eating Healthy On Halloween

Happy Halloween Conjuring Fairies

For those of us trying to keep an eye on our waistlines, Halloween can be a real nightmare. We are expected to buy lots of Halloween sweets and treats to hand out. Hopefully, we have enough trick-or-treaters to hand it all out and not be stuck with a bunch of extra temptation in the house, but if we have kids of our own, chances are that they will be bringing home buckets of sugary loot too. How are we supposed to eat healthy while surrounded by so much sweet temptation?

1. Hand out something other than sweets. You could hand out toothbrushes, but that might not be nearly as fun for kids. You could hand out coloring books, crayons, pencils, spider rings, or other Halloween party favors. You could hand out magnets or buttons. These are things that kids will enjoy without rotting their teeth, and there won't be any sweets left calling to your sweet tooth.

2. Throw yourself into decorating for the holiday. Keep yourself busy with making decoratons, hanging decorations and making your home look spooky to keep your mind off of the treats in your house. Bonus, you might be burning off some calories while clmibing laddders, reaching to hang things and pulling fake cobwebs across the ceiling.

3. Keep the sweets out of sight until you need them to hand out. Also keep the loot your children bring home out of sight until they have worked their way through it. Out of sight, out of mind, hopefully. Your kids don't need candy any more than you do, so try and limit how much they eat a time. Maybe give them a piece or two in their lunchboxes until it is gone.

4. Keep a lot of healthy snack food on hand. Chopped carrots or celery with a healthy dip is a quick and easy thing to have available when you get the urge to munch. In order to battle a craving for something sweet, have some fresh strawberries or raspberries available.

5. Drink plenty of water. Sometimes thirst can cause us to mistakenly think we are hungry, so make sure you are full up with water in order to prevent this from happening.

6. Have a healthy and filling dinner before all of the trick-or-treaters start arriving. Again, if you feel full and well satisfied, you are less likely to give in to the urge for one of those candy temptations.

7. Give in a tiny bit to temptation. Sometimes, giving yourself a taste of what you want will help to satisfy the craving. A small treat once in a while is not going to be the end of your healthy eating and is not likely to cause any weight gain, as long as it doesn't become something you do often.

Relax and enjoy the holiday day and have a happy Halloween!

Healthy Cooking With Kids

This was previously posted in the November 2011 issue of Beverly Hills Child Magazine where I write monthly about ways to ensure we raise healthy children.

One of the best and simplest ways to get your kids to eat healthier is by letting them help you make family meals. Children love to help, and they are more likely to eat food that they have prepared with their own hands and by their own efforts.
The following are some simple snack and meal ideas that children can help make.

1. Kebabs – Cut chicken or lean beef into large chunks, chop up some bell peppers into large pieces, set out a bowl of cherry tomatoes, chop up some onions into large pieces and set everything out with some skewers. Let your child push the pieces of meat, peppers, onion and tomatoes onto the skewers in whatever order they choose to and then grill them yourself. It’s a great way to help your child feel pride in helping you make the meal and also to get your child to eat vegetables (bell pepper, onion and tomato).

2. Dips for vegetables– Chop up carrots into sticks. Clean and prepare mushrooms and celery. Chop bell peppers into strips. Wash and set out cherry tomatoes. Then let your child help you make some dips. Use fat-free fromage frais or plain yogurt in several separate bowls and let your child choose which spices and seasonings to add to each one. You could have a jalapeno and cheese dip, using finely diced jalapenos and grated low-fat cheese, or you could have onion and chive dip by adding chopped fresh chives and finely diced onion. You could make a garlic and onion dip using garlic powder and onion powder. Your child might prefer a taco dip which would just take some taco seasoning. You can also have some dry soup packets, such as Lipton’s Onion Soup and add those to the plain yogurt to make a delicious and healthy dip.

3. Burgers – Finely dice onion and bell peppers. Let your child add the diced vegetables and whatever spices you wish to add to a bowl full of ground lean beef or ground turkey. Next, your child can use her hands to mash it all together and mix it up. Kids love the tactile sensations of getting messy while making this, and they will also enjoy patting the burgers into balls that they can then flatten onto a plate. Next, you grill the burgers and serve them on whole wheat buns with some lettuce and slices of tomato.

4. Peanut butter apple dip – This one is really easy to make. Let your child mix one 190g pot of fat-free vanilla or fat-free toffee yogurt to ½ cup of reduced fat and reduced sugar peanut butter. Once it is mixed until it’s smooth, give your child some apple slices to dip in it.

5. Healthy personal pizzas – Mix some tomato sauce with some oregano, a dash of salt, some garlic and a bit of pepper. Lay out some whole wheat pita breads. Prepare some low-fat grated cheese. Chop up some bell peppers and onion. Set everything out and let your child take a pita bread and top it to make his own pizza. Once he has added the toppings that he wants, just bake it for about 5 minutes at 250 degrees.

6. Fruit salad – Wash red grapes, green grapes, strawberries, raspberries, blackberries and blueberries. Chop up some cantaloupe and honeydew melon into bite-sized chunks. Let your child choose which of the types of fruit that she wants to add to her own bowl of fruit salad, and then let her pour an individual-sized pot of fat-free yogurt, in a flavour of her choice, over the fruit. Using a large bowl, let her make a fruit salad with all of the left-over fruit to serve to others.

7. Healthy Strawberries and cream – Wash and slice strawberries into a bowl. Let your child sprinkle a small amount of sweetener over his bowl of strawberries. Open an individual-sized pot of fat-free vanilla yogurt and let your child add two tablespoons of sweetener to it and mix it well. Then he can pour the yogurt and sweetener mixture over his strawberries and enjoy it!

8. Mexican meatballs – Finely dice some spring onions. Put one pound of lean ground pork into a large bowl. Let your child pour a packet of taco seasoning into the bowl and then add the diced spring onions to the bowl. Next, let your child mix it all together with their hands, letting it all squish between their fingers. Then your child can roll the mix into individual balls, small enough to make 15 meatballs. Bake in the oven for 20 minutes at 300 degrees.

9. Pasta – This is very simple and once you’ve boiled and drained the whole wheat pasta, your child should have no problems doing the rest. Your child will just need to add two heaped tablespoons of extra light mayonnaise , a bit of seasoning and about a handful of low-fat grated cheese. If these are added right away, the cheese melts and sticks in a tasty manner to the pasta. You do not have to add vegetables to the meal, but throwing in some peas or corn will add nutritional value to the meal.

10. Jacket potatoes – You will need to prepare some toppings for your child to choose from, such as tuna and mayonnaise, baked beans, low-fat grated cheese, or other toppings. Bake your jacket potatoes after piercing them several times with a fork and spraying them with a low calorie oil spray. One hour at 300 degrees should be enough time for the potatoes to bake. Once the potatoes are removed from the oven, let them sit for ten minutes, the put a potato on your child’s plate and slice it across in two cuts, one horizontal and one vertical. Place the potato on its plate in front of your child and let them choose how they wish to top their jacket potato.

There are many ways to serve healthy meals to your kids, but letting them help and be a part of the preparation is the best way to insure that they will want to, at least, try the food they are helping prepare. In all of the above suggestions, let your child be creative. He might come up with ideas of his own that will help improve or change the meal. It’s important to give your child choices but healthy ones, so that she can feel that she has some control over what she eats, and you can be assured that, whatever she chooses, it will be healthy.

Philips AirFryer Review

I was lucky enough to be given the opportunity to review the Philips AirFryer, something I have really wanted to try out.

The AirFryer makes it simple to give food a "deep fried" taste without using a lot of oil. The instructions say that, if you are using convenience food (like frozen chips (french fries) or chicken nuggets for frying), you don't need to add any oil to it at all. When using fresh, homemade ingredients, such as potatoes that you've peeled and sliced yourself, you need to add a very small amount of oil. For 500g of potatoes, you only need to add 1/2 a tablespoon of oil.

According to the materials that came with it, the Philips AirFryer will save you 80% of the fat in your "frying."

The Philips AirFryer arrived encased in a lot of packaging, but I was thankful to see that it didn't contain any styrofoam in its packaging.

I was given this Philips AirFryer in exchange for my reviewing it, so I figured I had better try out both methods of cooking with it. First, I cooked up some "fry chips" from the freezer section of the grocery store.

It was really easy to make them. First you set the temperature.

Then you put the chips in the AirFryer.

And then you set the timer.

Halfway through the cooking, you take them out and shake them up and put them back in. It was a very simple process, and by the end, my kids had some delicious chips (french fries) that tasted, as my five year old kept telling me "absolutely delicious!" (She also told me that she really likes my new "thingy" that helped me make them.) Chicken nuggets and chips (french fries)ar enot the healthiest of foods, in general, but if you must serve them up, then cooking them without any added oil is a good thing. And the Philips AirFyer lets you do that while retaining that "deep fried" taste that you won't get from oven baking.

Having made the chips for their dinner in just 13 minutes, I then added some chicken goujons to my AirFryer. The chicken goujons came out perfectly too, and they were just as easy to "fry".

Having cooked convenience food in the AirFryer, I then had to see how well it worked with fresh food, so I peeled and sliced up some potatoes and went through the very simple process again. The chips (french fries) made with the AirFryer came out really well, although I may have cooked them a few minutes too long. They did have a taste very much like they had been fried, and I only had to use a fraction of the oil I would have had to use without it.

After I'd done all of the food for the night, I realized that the machine had come with a metal divider to be used when cooking two things at once, so I could have "fried" the chips at the same time as the goujons.

The Philips AirFryer also came with a recipe book. I love recipe books, and this one had some great recipes in it! I found out I can even make brownies in the machine, but I will more likely use it to make some of the healthier recipes that the cookbook contained. It has recipes in it such as "fish and chips," "crispy curry potato cubes with coriander salsa," "feta triangles" and "meatballs with feta," just to name a few. All of the recipes in the recipe book contain the nutritional values of the dishes.

Overall, I am really happy with the Philips AirFryer, and I am looking forward to making many more meals using it.

Decadent Food

I had the silliest dream last night.

Before bed, Robert and I had been talking about our plan to eat really healthy this week. So of course, I dreamed that we were at a hotel and it was the next day, and there were master chefs there who kept giving us really decadent food. I knew we had completely sabotaged our diets, but the food was so good. I can even remember sampling a chocolate dessert and actually TASTING it in my dream. I was thinking how delicious it was and that I was going to eat it slowly and really savor it.

I woke up relieved that I hadn't really eaten all that food, but feeling as if I'd enjoyed it nonetheless.

When Healthy Living Means Losing Weight

I had a pretty good week. I walked loads this week, from 5 to 10 miles a day. I did a little bit of exercise on the Wii Fit Plus. I ate healthy, only succumbing to a few chocolates from the chocolate tins we were given at Christmas a few times this week.

And yet, the scale says I'm up. It's just a tiny bit up, not even half a pound really, but still up. I hate when this happens, but I also know that it's just part and parcel of this journey. The goal is to be healthier, not to lose as much weight as possible.

And yet, just 8 pounds away from finally reaching a healthy BMI, and just 10 pounds away from my goal weight, I find it a struggle to remind myself of this. I still want to see that number go down on the scale.

I know some people say it's better not to have the scale in the house at all, to just avoid weighing. Unfortunately, when I've tried that, I get lazy, and my weight starts creeping back up. For me, at the moment, the number on the scale is motivating. I'm working on getting away from that though, because I think this focus is counterproductive in my attempts to lead a healthy lifestyle.

I might come down half a pound or a pound before my weigh-in tonight, but I'm trying not to think about it.

10 Tips For Eating Healthy

1. Write everything down that you eat, keeping an ongoing total of your daily calories. Some days your calories will be a little higher than your maximum, and other days they will be lower, but try not to ever go below 1,200 calories.

2. If you're counting calories, don't count the calories in most fruit and vegetables, so you can eat as much of them as you want. (I love, love, love strawberries.)

3. Try and have 2-3 fat-free yogurts a day (not the layered kind), and at least one egg a day if not more.

4. Limit your breads and flour products, but when you do have bread or burrito shells, go for wholegrain ones. That also is true for pasta and rice.

5. Do have desserts, but get creative in cooking up healthy desserts, or buying low-cal versions of things you hate doing without.

6. If you're buying low fat products, check the ingredients. Sometimes "low fat" just means "high sugar."

7. Eating things like bacon, ham, beef, pork, chicken, turkey, lamb, etc is fine as long as you go with lean versions or extra lean versions.

8. As often as possible, cook your food from scratch. This way you know what's in your food. The more processed something is, the less healthy it probably is.

9. Don't obsess. There will be times when you eat something bad for you. Do not see yourself as a failure because of it and then go on to eat more junk. See those times as a momentary blip in your healthy eatng plan and go right back to eating healthy.

10. One of the best tips: Fill your plate 2/3 full with vegetables/fruit, then add your meat & whatever else to the space that's left. If you are really hungry and need seconds, that's okay, but do the same thing again (filling plate 2/3 with vegetables).

Eat Eggs To Help Lose Weight

After writing about the connection between dairy and weight loss, I started thinking about the connection between eggs and weight loss. Eggs are another food that is “free” (meaning we can eat as much as we want of it) on the Slimming World plan.

So are eggs really good for weight loss or is Slimming World wrong and its members’ weight losses just unrelated flukes?

According to the studies, eggs are an excellent source to aid in fat loss. And this is great news mainly because I enjoy eating eggs, but also because eggs don’t cost much to buy. They are also, apparently, good for eye health.

According to this article in Medical News Today, eggs are helpful to weight loss because they contain an essential amino acid called leucine. The article references a study which found that leucine

“potentially provides a weight loss advantage during dieting by helping reduce loss of lean tissue, promote loss of body fat, and stabilize blood glucose levels.”

This article on the website Bio-Medicine references a study that promotes eggs eaten for breakfast as aiding in weight loss. It even mentions that the egg-eaters had higher reductions in their waist circumferences. (Loss of belly fat is always a good thing for those of us who need to lose weight!) There also seems to be connection between eating eggs and feeling full, as this article states,

“This study further substantiates the findings of a previous study, published in the Journal of the American College of Nutrition,2 which found that an egg breakfast induced greater satiety and significantly reduced short-term food intake compared to a calorically equivalent bagel breakfast.”

This article on the website Weightlossresources.co.uk found a connection between eating eggs and satiety too,

“According to new research from the Rochester Centre for Obesity in America, eating eggs for breakfast could help to limit your calorie intake throughout the rest of the day, by more than 400 calories.”

A reduction in daily calorie consumption by 400 calories a day could result in a weight loss of a pound every 8 or 9 days. (Results, of course, vary for individuals.) If eggs make you feel fuller for longer, then it corresponds that you would find it easier to reduce your calories throughout the day after eating them for breakfast.

This article on Food Product Design states that not only do eggs aid in weight loss but they also help to increase energy levels. It states that this is because eggs are a good source of high quality protein. Too little high quality protein is bad for the body as this article states,

“In May 2008, the American Journal of Clinical Nutrition published a special issue on the value of protein in the diet. A major finding was that getting too little high-quality protein may contribute to obesity, muscle loss and increased risk of chronic disease.”

This article by Feedstuffs Foodlink continues making the connection between egg consumption and weight loss and energy levels. It references a study done at the Louisiana State University's Pennington Biomedical Research Center with lead researcher Dr. Nikhil V. Dhurandhar,

“The women who consumed eggs as part of a diet plan lost "significantly" more weight and reported "significantly" higher energy levels, Dhurandhar said.”

The studies show that eggs really do aid in fat loss. This fact, in addition to all of the other health benefits to be gained by eating eggs, makes them an ideal choice of food for anyone trying to lose weight (barring any egg allergies).

Slimming World suggest having your eggs, boiled, scrambled, deviled, made into an omelette, poached or dry fried. (Dry frying eggs means spraying the pan lightly with a low calorie oil spray and frying the eggs in no more than that.) I enjoy my eggs in all of these forms, but my favorite way to eat eggs is to make an omelette stuffed with bell peppers, spring onions and sprinkled with a little low fat grated cheese.

What's your favorite way to eat eggs?

Greatest Loser Competition

The woman who weighed only one pound less than me lost 6.5 pounds this week.

I lost SEVEN and won the Slimming World's Greatest Loser award for our group! Robert took a photo of me in the sash standing beside our Slimming World consultant, Sharon.

I won an engraved paperweight and pen set, a sash, a sticker and a certificate. I'm still amazed that I was able to lose seven pounds in one week. I exceeded any hope I had for weight loss for the week.

Losing so much in one week is going to make this week even more difficult. We'll be going out for dinner to celebrate my birthday, plus having birthday cake. Add that to the fact that I just lost a huge amount of weight and it could spell disaster for my next weigh-in. I'm going to spend Wednesday through Monday working really hard to maintain my loss. If I can get through this week without gaining any of the weight back, I will be thrilled. I do not expect to lose any weight this week. I just really, really don't want to gain.

Robert and I also won one of the raffle prizes. It was a rain poncho, a box of Orange, Mandarin & Cinnamon Tea, and a 3-pack of Lemon Hi-Fi Bars.

Tonight was also a "Bring & Try" night where everyone brings a low-syn dish to share with everyone else. Robert made Slimming World's Vindaloo Sauce from the "Slimming World's Saucy Secrets" recipe book. He made a small change to the recipe (as we usually do). He also baked up some chips (thick-cut fries) for dipping in it. He also made Bombay Bhajis and Cucumber Raita Dip from Slimming World's "100 Free On Green Recipes" book.

Here is a quick photo I took of the table of food that everyone brought to share.

I found a dessert recipe on the back of a packet of Hartley's sugar-free Lemon & Lime Jell-o mix. It was for making Lemon, Lime & Ginger Creams. I made changes to the recipe and added to layers to the dessert. It was a big hit at the meeting! I had people asking for the recipe, and a friend was telling me it's her new favorite dessert. She said it tasted like a mini cheesecake.

I started a blog to put the recipes I have tried out all in one place, with pictures of the food Robert and I have made. I wil still post them as I make them here, but in my recipe blog, it will just be recipes and all in one place, so it will be easier to search for recipes you might want to try out. Slimming World's Mr. & Mrs.

Tonight at Slimming World a couple of things happened along with our weigh-in. Today was a "bring and share" where everyone is supposed to make and bring some food to share with others that is either low-syn or syn free. I made a pasta dish with some food I had on hand.

Pasta

Two cups of whole wheat pasta
1 red onion (finely chopped)
2 Quorn sausages (grilled)(If you don't have the brand Quorn in your area, it is vegetarian versions of meats, so there was no actual meat in the sausages.)
2 medium eggs (boiled)
3 tbsp. extra light mayonnaise
100g low-fat cheese (grated) - optional
seasoning to taste

Boil the pasta until soft and then drain. Add three tablespoons of extra light mayonnaise (or make Slimming World's syn-free mayonnaise if you are following the plan) and mix in until all of the pasta is lightly coated. Add seasoning to taste. (I use Nature's Seasons seasoning blend, but it can only be found in the US. I get it shipped to me by friends and family.) Chop the sausages into small bits and mix in. Mix in the chopped red onion. Dice up the boiled eggs and mix into the pasta. Sprinkle the grated cheese over (while the pasta is still hot) and mix in.

Robert made brought his chicken, rice and vegetable casserole dish. (He made so much of it last time that he froze half of it, so this time, he thawed the frozen portion and heated it up along with some onion stock.)

My friend Helen made a Banoffee Pie from a recipe on the Slimming World site. It was really yummy! I went back for seconds, but the other members had gone back for seconds before me and it was already gone.

Robert and I, being the only couple going together to the meetings, were up for this year's "Mr. & Mrs." competition. Other members, if their significant others were losing with them even though not members, could have tried to win it too. But we were the only ones, so we won by default. We still had to get up and tell our stories to the group, pass around before and after pictures, and answer questions. (I will post the before and after photos that we shared in a separate post later.)

We won a little paper-weight and pen set which were engraved, and we got a sash proclaiming us the winners. It was fun, although I get terribly nervous standing and talking in front of people, even though I know most of them already. There was also a sticker to put in our Slimming World books.

I found out that there is a "Most Weight Lost" competition later this year, and I am only a few pounds away from overtaking the lead loser at the moment, so I've got a slight chance of winning it!

I lost 1 pound this week. That now means I weigh 202 pounds. My starting weight was 272.5 pounds, so I've lost 70.5 pounds so far! I also hit my 5 stone marker. (In England, people state their weight in "stones" which are equal to 14 pounds. I've lost 5 stone and half a pound.)

I was actually disappointed that I only lost one pound. I worked just as hard this week as last week, but last week I lost four pounds. I am so close to Onderland and I want to reach it so badly! In retrospect though, I am no longer annoyed about only losing one pound. I'm proud of it. I've decided that it would be really great to reach Onederland by my birthday. My birthday is on the 27th of this month, so I have 3 weeks and 4 days to lose 2.5 pounds or more. I can so do this! Even at my slowest pace of losing, I can still reach that target! It'd be great to reach it this week and be further into Onederland by my birthday, but I'm just taking each week and each day as it comes.

I also just realized that LAST week, I reached another of my mini goals, which was to lose 25% of my starting weight! I needed to get down to 204 to reach that mini goal and last week I was 203. Now I'm 202. I'm creeping ever closer to each of my mini goals along the way. I've now reached 12 of the 25 mini goals I have set for myself.

7th Anniversary Date & Weigh-In

On our way out to dinner for our 7th wedding anniversary, Robert and I stopped at our Slimming Wold meeting for our weekly weigh-in. Despite going back to my calorie-counting and exercise routine this week, I was up half a pound. I'm annoyed about it, but not discouraged. Robert was up a pound and a half, but still within his target.

We then went out to eat. Robert chose a Chinese restaurant. He ordered a chicken dish for our starter. He was going to order duck, but I don't like duck. Then I had chicken chow mein and chilli beef. I didn't eat much of the chilli beef because I didn't like the way it was prepared. The texture and taste suggested that they just fried up the fat of the meat for the dish (as if frying it wasn't fattening enough), and I was unimpressed with the flavor.

Then we had a decadent caramel and chocolate ice cream dessert.

Robert presented me with yet another anniversary gift - some beautiful earrings he bought at a jewelry store. I was perfectly happy with my shawl and rose, so he didn't need to give me anything else. I love the earrings though! I wasn't wearing any, so I put them on right away.

When we got home last night, my daughter Kayla took a couple of pictures of us.

(You might assume from the first photo that I am on my knees to avoid my body showing, but actually that's just the natural height difference between my 6'8" tall husband and 5'2" short me.)

I have a lot of exercise to do today to make up for last night's meal. I still can't figure out where the half pound weight gain came from. My daily calories never went over 1,500 last week, and I spent 45 minutes exercising daily for six out of seven days last week.

Vampire Eating

Pasta Queen, a fellow diet blogger who has lost an incredible 190 pounds and kept it off, posted a blog about vampire eating. I love her description of it:

"I've partaken in vampire eating habits more frequently recently. My cravings play nice during the day and bare their fangs at night."

The phrase caught my eye for two reasons. First, I noticed it because I have vampires on my mind since I am designing Twilight stuff for my shop. Second, it caught my attention because I can completely relate to it! Evenings are the worst for me! Sometimes I'll even eat stuff I'm not particularly fond of because I suddenly feel so hungry, even though, rationally, I know it's not true hunger I am feeling.

New Year's Eve

It's New Year's Eve and many around the world are making resolutions for the new year. I plan on hitting my goal weight in 2009, but it's not really a new year's resolution. It's a plan, and one I made when I first started eating healthier, exercising and losing weight back in May.

What are your plans and goals for the new year?

Up Half A Pound

At yesterday's weigh-in, I gained half a pound. I wasn't surprised though. I was relieved it wasn't more. I spent the week not getting any exercise and eating about 100 to 200 more calories a day than what I've been eating to lose weight. It could have been worse.

Robert gained a pound and a half, and, after last week's two pound gain, he is now out of his "target" range and will have to pay for the meeting next week. He wants to revise his target for even lower now.

So we are both devoted to getting in more exercise this week and eating better. I don't see Christmas dinner as being much of a problem. The Slimming World plan allows us meat and potatoes, and we can use our "syns" allowance for things like stuffing and bread rolls. Or use it on dessert.

For the Slimming World meeting, it was another day to bring food in for everyone to try. I will share the recipes of what we made later. I made Lemon Fairy Cakes. Robert made grapes dipped in dark chocolate, Winter Bites (a recipe of his own concoction) and Breakfast Eggs (another one he created).

It was all really yummy.

For Slimming World members, the Breakfast Eggs and Winter Bites are "free" on Original and Green (when using the bacon in the Breakfast Eggs as a healthy extra), the chocolate dipped grapes are 1 syn each and the Fairy Cakes are 5 syns.

Someone there made Bombay Potatoes and they were really tastey too.

So Far

Things are going well. I am sticking to my daily calorie allowance, and, although I'm not using the elliptical trainer every day, on the days I am not using it, I am getting other forms of exercise. I walked a couple of miles with my husband yesterday.

I still feel like I'm not really exercising unless I bore myself for at least 45 minutes on the elliptical machine. I know that's not true, but it feels true.

My back has been hurting lately. I think it's because I am nursing the bay so often and I sort-of hunch over when I'm nursing him. I can't find an easier position to nurse in though.

Robert made us some stuffed cabbages (stuffed with lean beef mince, rice and tomato sauce) for dinner the past couple of days. They were tasty amd healthy! They didn't stay together very well though, so we might try to make them again and take a picture of how it turns out next time.

Yay!

Well, I needn't have worried about my weight loss this week. At my weigh-in, I showed a 2 pound loss for this week! Woohoo!

I've now lost a total of 65 pounds. I am almost halfway to my ultimate goal. I am only 5 pounds away from having lost 5 stone, and I am only 8 pounds away from seeing onederland!

Next week at our Slimming World meeting is another week to bring a dish to share. I am thinking of making Lemon Fairy Cakes from one of the Slimming World recipe books.

In A Funk

I'm in a funk. I thought I had this motivation thing all sussed out and would never fall into this kind of situation, but here I am. I have only exercised on the elliptical machine once this week (although I've gone with my husband to walk the dog in the evening several nights). I went over my daily calorie allowance twice this week, and for most of the week my calories hovered at the high end of what I allow myself.

I've had to fight cravings that have been hitting me in waves. Maybe it's because I'm nursing the baby. Maybe it's because I'm not getting any sleep. I don't know why the cravings have been so bad lately or why I have not felt motivated to exercise.

I weigh-in later tonight. I have no idea if I will go up or down on the scale. I am hoping, of course, that my weight will go down. But I have not put in the effort to make it so this week. So I optimistically hope that nursing will do for me this time what it has never done before and suddenly the weight will just "melt off" as so many of my friends have claimed it does for them when they nurse. Or I find myself hoping that the water-weight and other stuff from the pregnancy has not finished falling off of me and I will see a bit more of it come off this week. Or maybe I'll just be lucky.

I have not consumed enough calories to gain weight this week, but my body doesn't always follow the rules. So I will just have to wait and see.

I am so close to onederland and I can't wait to reach it! So why am I suddenly slacking off? Why am I in this funk?
